  • 6-8 tablespoons ice water

  • 100g granulated sugar
  • 50g brown sugar
  • 2 tablespoons plain flour
  • 1 teaspoon chai spice mix
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 25g unsalted butter, cut into small pieces

For the Topping:

  • 1 egg, beaten (for egg wash)
  • Granulated sugar, for sprinkling

Instructions:

  1. Preparing the Pastry Crust:
  • In a large mixing bowl, combine the flour, sugar, chai spice mix, and salt.
